Our Founder, Smoke Master and now Brand Ambassador for Woodbridge Smokehouse, Roger Scales was inspired to begin the smokehouse after purchasing an idyllic 25 acres of apple orchards here in Woodbridge. With views over the D’Entrecasteaux Channel, home to some of the world’s finest Atlantic Salmon, it seemed only natural for Roger to begin smoking fish with apple chips from the orchard – a match made in heaven. These days you will find Roger at tasting events, trade shows and dinners around Australia and Asia, as he shares his passion for finely smoked fish with the world.

Sue, Dave, AnnaLee and Carol (Processing)
The powerhouse of our operations are undertaken by Sue, Dave, AnnaLee and Carol. All the team are long time locals of the beautiful Channel area, and have over 75 years’ experience between them of hand filleting, brining, smoking and slicing your fish to perfection.
Tamsin & Sara (Office & Administration)
Visit our cellar door or drop us a line, and you’ll most likely be speaking to Tamsin and Sara, who share office & administration duties between them. They also share a love of good Tasmanian pinot noir. With diverse backgrounds in office management, Chinese medicine, export and wine marketing, your orders are in safe hands.
